Tofu fried rice is a nutritious, protein-packed, and versatile dish that promotes muscle repair, heart health, digestion and weight management, especially when made with.

whole grains, vegetables, and healthy oils. It’s a well-rounded meal that can be tailored to fit various dietary needs and preferences. This is my take on Tofu Fried rice.

Ingredients

  •  250gm of rice...partially cooked about 3/4
  • carrot 1/4 cup thinly diced
  •  zucchini or Koosa 1/4 cup thinly sliced
  •  broccoli 1/4 cup if available
  •  tofu cut in cubes 3/4
  •  mushrooms 1/4cup
  •  1 tbsp wood pressed coconut or sesame oil
  •  soya sauce according to taste
  • chili flakes
  • white vinegar 1 tsp
  • chili sauce if required (if you like it spicy)

Method

  • Take a pan and sauté each individual veggie separately.  Sauté tofu to slight brown.
  •  Now add all the veggies to tofu and add little soya sauce and chili flakes to it.  Then add the rice and add soya sauce, chili sauce and vinegar.
  •   Cover the pan and cook on low flame for 10min
  •  Serve it hot
